During the war, home grown vegetables were the staple of many diets, as meat, dairy products and sugar became scarce.

Potatoes were easy to grow in the British climate, cheap to buy and provided valuable vitamin C in the absence of summer fruit.

Today potatoes are still an affordable, sustainable and nutritious part of the UK diet, although consumption is sadly falling.

This resource revisits this wartime staple and looks at some of the less well-known nutritional aspects of the potato.
